Red Amaranth has a sweet earthy flavour and can be eaten as a microgreen, baby leaves can be used in salad and larger leaves can be wilted like spinach.
To grow for leaves, split up the pot and grow on in a sunny site. The leaves can be picked all summer.
The plant is also grown for grain and once it bolts and flowers you can collect the edible seeds which are both high in protein and gluten free.
